The Secret to Pressing Cider

Aaron pressed the final batch of apples this week and the cider press is now tucked away. We have a couple trees in our orchard that actually start dropping apples the end of July - so we did our first pressing of the season in August and then again the last few weeks with all of the apples that are ripe now. I'm so glad that whoever planted our trees about 100 years ago thought to plant varieties that ripen at different times! It is crazy how much fruit one tree can produce. • We press as much cider as we can to store and send home with family and friends. Plus to fill our own freezer with jugs of fresh cider that we'll pull out all thru the winter - and the cellar is full of fresh carboys that Aaron is in the process of turning into hard cider! • This tradition of cider pressing is what drew our hearts to our home, we always hoped to have fruit trees. So when we saw that the house had it's own orchard we were in love. • It's taken the last 11 years of tending to get the trees to a healthy point. Aaron will be out pruning the trees come March, and then we'll be giving them fertilizer in the spring.
