Chicken Keema by Chef Dipna Anand

Celebrity Chef Dipna Anand cooks up a delicious Chicken Keema, her grandfathers recipe dating back to the 1950’s • Recipe • • 750g chicken mince • 2 tablespoons dried fenugreek leaves (Kasturi Methi) • 1 teaspoon garam masala • 4 tablespoons fresh coriander (chopped) • 2 medium sized onions (finely chopped) • 380g plum peeled tomatoes • 30g butter • 5 tablespoons vegetable oil • 1 ½ heaped tablespoons ginger/garlic paste • 1 teaspoon red chilli powder • 1 ½ teaspoons turmeric powder • 1 teaspoon cumin powder • 1 ½ teaspoons cumin seeds • 3 finger green chillies (finely chopped) • 1 ½ teaspoons salt or to taste • • • Method: • • 1.Melt the butter in a saucepan and add the oil, heat together for about 30 seconds • 2.Add the cumin seeds and once they begin to sizzle add the onions and cook on a high heat stirring continually, this should take about 10 minutes • 3.Once the onions are golden brown and beginning to caramelize, lower the heat to medium and add the ginger and garlic paste and green chilli paste and cook for about 2 minutes • 4.Add the plum peeled tomatoes to the together with the red chilli powder, turmeric, cumin powder, salt and butter and cook on a medium heat for a good 5 minutes mixing continuously, if the masala begins to spit too much, you can lower the heat a little and cover the masala sauce • 5.Once the masala sauce has completely cooked and starts to sizzle and seep oil from the edges add the chicken mince to the masala sauce and use the spoon to break up the mince to avoid it clumping together and then cover the saucepan • 6.Let the chicken mince cook in the masala 10-12 minutes (stirring occasionally) on a medium heat • 7.Once the chicken mince has completely cooked in the masala, lower the heat slightly and add the finishing touches of garam masala, fresh coriander and dried fenugreek leaves, cook for a final minute or so, remove from the heat and serve • • #Chickenkeemakirecipe, #Keema, #Chickenkeemarecipe, #chickenkeema, #Dipnaanandbrilliantrestaurant, #Dipnaanandrecipes, #Dipnaanand, #Dipna, #Brilliantrestaurantsouthallgordonramsay, #Brilliantrestaurantsouthall, #Curryqueenrecipes, #Curryqueen, #Punjabifoodrecipeschicken, #Punjabifoodrecipes, #Punjabifood
