Courgette amp Walnut Cake

Subscribe here: • / @barbara1406 • Full recipes on here: • https://growplatedance.blogspot.com/2... • Courgette and Walnut Cake Recipes • Ingredients: • 225g Unsalted Butter at room temperature • plus extra for the tin • 225g Caster Sugar • 200g Self-Raising Flour • 1 Lemon Zest • 4 Medium Eggs at room temperature • 300g Courgettes • 50g Walnuts • 1 tbsp Demerara Sugar • Method • Heat oven to 180C/160C fan/gas 4. Lightly butter a deep, round 20cm cake tin • Place the butter in a large bowl and beat with an electric whisk until light and fluffy, then add the caster sugar and lemon zest and beat again. Gradually add the eggs to the mixture, beating well with each addition, until fully combined. The mixture will begin to look glossy – if at any stage the mixture curdles, beat in a spoonful of ground almonds and continue to add the egg until it is all amalgamated. • Stir in the flour, then the courgette, and fold everything carefully together using a large spoon. If the mixture is too dry add a few spoons of courgette juice. Fold everything through, then transfer the mixture into the prepared cake tin and scatter with the walnuts. Finish with the demerara sugar sprinkled on top. Bake the cake for 45 mins, or until a skewer inserted into the middle comes out clean. Transfer to a wire rack to cool slightly in the tin, then remove from the tin. • Notes: • I am conscious of having a diet with as less added sugar as possible, so I only used 80g of sugar when I made this video. It was an experiment, but nevertheless the cake came out delicious. I shared it with my friends and I asked them for honest opinion. They liked it! π • But if you don’t want to compromise the sugary flavor, just stick with 225g of sugar. • Also, you may use any variety of courgette you have on hand! • If you, like me, have lots of them in this period, here are some ideas on what you could do with them: • Cake (obviously) • Grated raw in a salad (where I also added the remainder of the courgette juice) • Fermented • Pickled • Risotto courgette • As a side dish, roasted or steamed • … and much more. • Next time, I will ferment them. Never done it before, but I will give it a go and let you know how it goes!
