Skittles Cake • Ingredients • Cake • 2 sticks unsalted butter, softened • 1 1/2 cups granulated sugar • 4 eggs, room temperature • 2 teaspoons vanilla extract • 3 cups all purpose flour • 2 and 1/2 teaspoons baking powder • 1/2 teaspoon salt • 1 cup whole milk, room temperature • 1/3 cup lemon juice • 1 teaspoon lemon extract • 2-3 drops of yellow gel food coloring • Frosting • 3 sticks unsalted butter, softened • 5 cups confectioners’ sugar, sifted • 1 tablespoon vanilla extract • 1/4 teaspoon salt • 3-6 tablespoons heavy cream, room temperature • 2-3 drops of orange gel food coloring • Decoration • 1 14 ounce bag of skittles • 1 small bag of skittles • Cotton balls • 1 balloon stick • Silver Metallic Edible Food Paint • 1/2 cup of white chocolate • Preheat the oven to 350°F. Grease and flour 3 8-inch round cake pans (or you can use 6 inch pans). • In a large bowl with a handheld mixer or in the bowl of a stand mixer, beat the butter and sugar together until light and fluffy, 4-5 minutes. • Add the eggs, one at a time, mixing well after each addition. • Beat in the vanilla and lemon extract. • Combine the flour, baking powder, and salt in a medium bowl. Stir with a whisk and add it to the butter mixture followed by the milk. Beat on medium-low speed just until combined.  • Stir in lemon juice • Add 2-3 drops of yellow gel food coloring and mix into batter • Evenly distribute batter into the prepared pans. Bake for 20-30 minutes or until a toothpick inserted into the center comes out with few moist crumbs attached (be sure not to overbake and start checking your cakes for doneness around the 15 minute mark). • Cool for 10 minutes. Remove from pans and cool completely on a wire rack.  • Frosting • In the bowl of a stand mixer or a large mixing bowl with a handheld mixer, beat the butter on medium-high speed until creamy and pale in color, about 5 minutes. • Add half the confectioners’ sugar and beat on low speed just until the sugar has fully moistened, then turn the speed up to medium-high and beat until well incorporated, about 3-5 minutes. • Add the remaining confectioners’ sugar and beat on low speed just until the sugar has fully moistened, then turn the speed up to medium-high and beat until well incorporated, about 3-5 minutes. • Add the vanilla and salt and blend well. • Add 2-3 drops of orange gel food coloring and mix well. • Turn the mixer on low speed and slowly add heavy cream a tablespoon at a time.
