Awesome beaver recipe that will make your tummy happy and your taste buds excited! Hope you enjoy- ingredients and steps are as follows ⤵⤵⤵ • (2) Larger beaver back straps (trimmed silver skin) • (6-8) Slices of bacon • (2tbs) Olive oil • (2) Medium onions (chopped) • (4) Cloves of garlic (crushed) • (5) Baby yellow potatoes (chopped) • (1 Cup) Baby carrots • (2) Chili Peppers • (1 Cup) Beef or game stock • (1) Sprig of Rosemary • Preheat oven to 375 degrees. • After trimming silver skin off of loins, cunt into portions. Wrap the portions in bacon strips and secure with tooth picks. • Heat cast iron pan (or any oven safe pan) to medium heat and add 2 tbs of olive oil. Place bacon wrapped portions of meat into pan and cook until the bacon is golden and mildly crispy. Once bacon is golden, remove from pan and plate for the time being. • After plating the meat, drain the majority of bacon grease into a bowl. With remainder of grease left in the pan add in the onions and caramelize. grease can be poured back in from the bowl if needed during caramelizing onions.
