This healthy Banana Bread is soft, moist, super yummy and packed with wholesome and healthy ingredients! It’s a one-bowl bread which is easy to make and bursting with banana flavor. • INGREDIENTS • *2 large ripe bananas/ केले • *1/4 cup oil of your choice/ तेल • *3 tbsp jaggery powder/ गुड़ पाउडर • *1 tsp baking powder / बेकिंग पाउडर • *1/4 tsp baking soda / बेकिंग सोडा • *1 tbsp lemon juice / नींबू रस • *2 tbsp flaxseed powder and 4 tbsp water to make flax gel / अलसी पाउडर और पानी • *3/4 cup whole wheat flour / गेहूं आटा • *1 tsp vanilla extract / वनिला • *2 tbsp pumpkin seeds or any seeds and nuts of your choice / कद्दू के बीज • INSTRUCTIONS • 1- In a blender add some flaxseeds and grind them into a fine powder. Take 2 tbsp from this flaxseed powder and add it in a small bowl along with 4 tbsp water. Give it a stir and let this mixture rest for around 15 minutes or till it thickens and turns into a flax gel. • 2- Add bananas in a large bowl and using a fork mash them into a smooth purée. Add in oil and jaggery powder and give a good whisk till everything is well combined. Now add in the thickened flax gel followed by lemon juice and vanilla extract. Stir well till nicely incorporated. • 3- Now add in whole wheat flour, baking powder, baking soda and mix gently till everything is well combined but make sure not to over mix the batter. Stir in the pumpkin seeds and give it one more gentle mix. At this stage preheat the oven at 180°C/ 350°F for around 10-15 minutes. • 4- Pour the batter in a parchment paper lined loaf pan and bake it in a preheated oven at 180°C/ 350°F for around 45-50 minutes.
