Iberico Pork on the Akorn Jr chargriller

Paired with the pistachio gremolata it’s just a ticking time bomb of absolute flavor! • Recipe by @sweettuskbbq👇 • Using @eat.campogrande Presa, oil as a binder, season with just salt pepper • Get your Akorn Jr. set up or indirect heat at 250° • Insert your thermometer and smoke until 135° internal • In the meantime, start on the gremolata • In a food processor, blend together: • • Handful of chopped, flat leaf parsley • • 1/3 cup @wonderfulpistachios • • 1/4 cup grated parmesan • • Zest of one lemon • • Juice of half lemon • • Pinch of salt and pepper • • 3/4 cup olive oil • Once Presa is up to temperature, give a hot sear about 1 minute per side • Remove, let rest and slice against the grain • Top with gremolata and enjoy • • Follow us on socials! • / chargrillergrills • / chargriller • / chargrillergrills • / chargriller
