One of my favourite Christmas cookies to give as gifts. This recipe Spelt Greek Kourabiedes shortbread cookies is my version of the traditional butter cookies. They are very similar to my Snowball cookies from last year with walnuts but this recipe is with almonds. These traditional buttery shortbread Greek cookies are filled with interesting flavours of vanilla, orange and almond and decorated with a layer of icing sugar. A traditional Greek festive biscuit now made with spelt flour. These could also be made with gluten-free flour or swapped back to regular flour. To make it quicker and easier I used store-bought ground almonds, but if these aren't available toast almonds for about 10 minutes at 320˚F and grind them in a food processor. • I have fond childhood memories with my first ever bite into one of these biscuits, it was the most enjoyable mouth-watering sensation. We were fortunate to have Greek neighbours, and Tricia the mum always had freshly made Greek cookies when we visited. I used to think, when I grow up I will make these myself. • I made a video for Valentines Day a while back making this recipe in heart shapes. I thought this year I would film for you the original Greek crescent shape but bake them with spelt flour. • Takes = 15 minutes prep. then resting time • Bakes = each tray 15 minutes • Makes = 20 to 25 small crescents or balls • _____________________________________________________ • Chapters • 0:00 Intro how to make the greek shortbread cookies • 0:35 whip butter and sugar until creamy and white • 1:00 preheat oven 160˚C, 320˚F • 1:16 other ingredients • 1:50 prepare your baking trays • 2:00 stop and scrape • 2:16 add in the zest of one orange then vanilla, then egg • 3:00 whisk baking powder and flour then add to mix • 3:39 fold in by hand almonds • 4:17 wrap in plastic to chill in the fridge • or form cookies straight away then chill for 30 minutes before baking • 4:45 slice the chilled cookie dough • 5:00 how to form the crescents • 5:40 bake 15 minutes until golden • 5:50 make another tray then rest in the fridge • 6:28 add optional rose water • and decorate with sugar • 7:30 store and wrap as a gift • 7:45 taste test • 8:28 outro • ___________________________________________________ • 🧑🏼‍🍳 Ingredients • Soft Unsalted chopped butter – 8.8 oz (1 UK packet) • Sifted Icing Sugar – 3.5 oz (2/3 cup) plus about 7.1 oz extra for dusting • Large Egg – 1 • Spelt Flour (or your choice) – 11 oz (2.5 cups) • Vanilla Extract – 1 teaspoon • Orange zest – 1 grated • Baking powder – 1 tsp • Ground almonds or almond flour – 2.1 oz (1/2 cup) • Rosewater syrup (optional) – 1 tbsp • ___________________________________________________ • 🎁 Recipe link • https://suemareep.com/spelt-greek-kou... • _______________________________________________ • Subscribe to YouTube • https://www.youtube.com/c/SueMareeP?s... and hit the 🔔 • Newsletter – https://suemareep.com/#/portal/signup • Facebook –   / suemareepkitchenlove   • Instagram –   / suemareep   • Newsletter – https://suemareep.com/#subscribe\\ • My secret tool – Tube Buddy https://www.tubebuddy.com/SueMareeP
