Raspberry Jello No Bake Cheesecake Recipe

This no bake blackberry and raspberry Jello cheesecake is a delicious, easy to make recipe. • 1/2 and 1/8th cups of graham cracker crumbs • 1/8 cup white sugar • 1/8 cup melted butter or margarine • Mix the ingredients together and press into the bottom of a 8x18 pan that has been lined with plastic wrap. • Mix 1/2 cup of boiling water with 1/2 envelope (16g or 1 1/4 tsp) of unflavoured gelatin powder and stir until dissolved. Add one 8 oz (250g) package of room temperature creme cheese and 1/3 cup of white sugar and blend until smooth. Pour this mixture over the top of the crumbs and gently spread evenly. • Thaw blackberries and raspberries or clean and use fresh. Press the berries firmly into the cheesecake layer. Chill 2 hours. • Mix one package of raspberry jello powder with 1 cup of boiling water, stir until dissolved and then add one cup of cold water. Gently pour the jello mixture over the chilled cheesecake layer.
