Let's make every meal a moment to savor on 'Gussied Up'! • Blueberry Buttermilk Galette • Ingredients • For the crust: • 4 ounces (1 stick) unsalted butter cut into 1/2-inch chunks, frozen • 1 1/4 cups (5 ounces) all-purpose flour • 2 teaspoons granulated sugar • 1/2 teaspoon salt • 4- 6 tablespoons buttermilk • For the filling: • 3 cups blueberries • 1/3 Granulated sugar • 2 tablespoon lemon • 3 tablespoons cornstarch • Zest of lemon • Raw sugar • Method: • Combine flour, sugar, and salt, then transfer to a food processor. Add butter and pulse until it forms pea-sized chunks. Slowly add buttermilk while pulsing until dough forms rough crumbs. Adjust with more buttermilk if needed. Wrap in plastic wrap, and refrigerate for at least an hour. • In a large bowl combine the sugar, lemon juice and zest, and cornstarch. Whisk to combine. Fold in the blueberries and toss to coat. • Roll out the dough to 12 inch circle, about 1/4 inch. Place on a lined cookie sheet. Add the blueberry mixture to the center out to the edges leaving a 2 inch empty boarder. Fold the edges up over the blueberry filling. • Brush onto the exposed crust with buttermilk. Sprinkle the crust with raw sugar and bake 45-55 minutes until the bottom is golden and the blueberries are tender in a bubbling sauce.
