Palabok • ingredients: • 125 grams Bihon (rice noodles) • 1/2 cup ground beef(Substitutes: Ground Pork or Chicken) • 4 tbsp annatto seeds • 1 Shrimp broth cube • 1 Chicken broth cube (Substitutes: pork or beef broth cube) • 4-5 tbsp All purpose flour • pepper to taste • 6 cups of water • 2 tbsp cooking oil • fish sauce to taste(patis) • Toppings: • 2-3 boiled eggs, cut into wedges • 1/4 cup boiled chicken, shredded (Substitutes: pork or beef) • 1/4 cup boiled small shrimps • green onions • calamansi • chicharon(pork cracklings), crushed • Procedure: • 1) dilute annatto seeds in 1/4 cup water until the reddish color comes out • 2) soak bihon in water for 15 minutes; drain • 3) heat oil;saute ground meat until light brown • 4) add water, Chicken broth cube, add the diluted annatto and shrimp broth cube. • 5) Simmer for 5 minutes • 6) add flour gradually (optional: dilute in 1/4 cup water) mix briskly until thick. Cook in low fire • 7) when the sauce is thick add fish sauce to taste and pepper • 8) mix well and turn the heat off; set aside • 9) cook bihon for 3 minutes; drain water • 10) assemble • 11) serve with bread • Making pancit Palabok is a bit more work. I can only eat Palabok when we eat at the fast food or when I visit my Tita who is very good in cooking the Palabok. But when I discover this recipe I'm so glad because I can cook my own Palabok at home. In this recipe the cooking process made easy and hassle free.
