I used the food network easy Parmesan risotto recipe for this. Once the risotto is done, let it cool to room temp. Take the risotto and put on a sheet pan lined with plastic wrap. Press down the risotto to about 1/2 inch thick or as thick as you’d like the cakes to be. Cover with plastic wrap and place in the freezer for about 30 mins until cold. Remove and use cookie cutter to cut them into circles. Next, bread like a chicken cutlet. To do this, take two bowls and fill one with 2 whole eggs whisked. The other should have bread crumbs. First, dunk the risotto into egg and completely cover all sides. Second, roll around in the bowl with bread crumbs until completely covered. Third, fry in a pan with shallow olive oil on medium heat until each side is brown. • shaved Brussel sprouts in lemon parmesan vinaigrette - take a 16 oz bag of shredded Brussel sprouts. In a bowl, whisk 60g olive oil with 30g lemon juice until combined. Then whisk in one teaspoon of salt and half teaspoon of pepper. place the sprouts in a deep bowl and pour the vinegrette over and mix with hand. once thoroughly mixed.. sprinkle half a cup of grated cheese and thoroughly mix into the salad. add more cheese to adjust flavor to your liking • Assemble like in the video. I also made a basil drizzle (kinda of like a pesto) for plating and to give a little extra flavor. It’s easy to make and you kind find a video by searching the web
