Let's make every meal a moment to savor on Gussied Up ! • Farmer’s Market Gazpacho • Ingredients: • 2 pounds tomatoes, cored and large diced • 1 bell pepper, cored and diced • 1 small sweet onion, dice • 1 large cucumber, peeled, seeded, and diced • 4-6 cloves roasted garlic or 1 tablespoon garlic powder • I tablespoon salt • 2-4 tablespoons tomato paste ( optional) • 2/3 cup olive oil, plus more for garnish • 1 cup small diced vegetables (I like tomatoes, cucumber, and radishes) • Red pepper flakes (optional- will make it spicy) • Method: • To a high-speed blender, add the tomatoes, pepper, onion, cucumber, and garlic and blend on • medium-high until smooth, about 2 minutes. • Taste, does it need a more concentrated tomato flavor? Add the tomato paste, 1 tablespoon at a • time. Blend. Add the salt. With the blender running on medium-low, drizzle in the oil until the soup is emulsified and • creamy. Pour through a mesh strainer to remove any skins and seeds that weren’t blended. • Chill in the refrigerator until cold, about 2-3 hours. • When it’s time to serve, taste the soup and adjust the seasonings and texture if needed. Foods • get thicker and less flavorful the colder they are. • To serve place 1/4 cup of small diced veggies on the top of each soup bowl. Drizzle with olive oil • and a sprinkle of red pepper flakes.
