I’m very lucky to have a special celebrity guest coming over for dinner tomorrow evening. Her preference is always the same, fish! So let’s try to get some fresh bass to satisfy her fishy tastes. See below for the fishing rig, the recipe, and the music credits. • The fishing rig consisted of a Finesse TRD by Z-man Fishing Products which can be found here: http://zmanfishing.com/store/categori... and a Finesse Shroomz jig head, also by Z-man found here: http://zmanfishing.com/store/categori... • Recipe: • The recipe was adapted from the recipe found here: http://allrecipes.com/Recipe/Pan-Sear... • Pan Seared Bass • INGREDIENTS: • 1 to 1 1/2 pounds of any white fish fillets (like largemouth bass or tilapia) • salt and pepper to taste • 3/4 cup all-purpose flour (or low-carb flour) • Enough olive oil to just cover the bottom of a large skillet • 4 tablespoons unsalted butter, melted • DIRECTIONS: • Rinse fish fillets in cold water and pat dry with paper towels. • Season both sides of each fillet with salt and pepper. • Place the flour in a plastic bag. • Place the fish in the bag and shake the bag until fillets are coated. • Shake off the excess flour. • Heat the olive oil in a skillet over medium-high heat. • Sear the fish in the hot oil until the fish flakes easily with a fork. • For small fish, it’s 2 1/2 minutes on one side and 1 1/2 on the other. • Brush the melted butter onto the fish in the last minute before removing from the skillet. • Squeeze lemon juice and add fresh herbs. • Serve immediately. • The Music was “The Farmers Jamboree.” I was unable to find the origins of this song. However I did find that it is one of the songs listed on an album called “The Great Canadian Fiddle and Other Canadian Musical Folklore.” Here it is performed by fiddlers Phil And Vivian Williams on January 15, 2011, at the Portland Old Time Music Gathering.
