Scallion Pasta Recipe Shorts

#Shorts #scallionpasta • Start by making some shallot oil by frying 2 chopped shallots in a generous amount hot oil until they are golden brown. Strain the shallots and retain both the crispy shallots and the shallot oil. • Boil spaghetti no. 5 in boiling water salted with 1 tsp salt for 7 minutes. Strain the pasta and retain the salted pasta water. • In a hot wok, add a few tsp of the shallot oil. Once the oil is hot, add 4 to 5 stalks of chopped scallion. Watch it sizzle in the wok as the scallion will release it’s flavour in just a few minutes. Season with Sarawak or regular white pepper. • Once the shallot oil has been perfumed by the scallion and is very aromatic, add a ladle of the pasta water. Have a taste, it should taste as salty as seawater. If it is not salty enough, season with more salt. • Add the spaghetti and toss until the pasta has absorbed most of the liquid. Once it is so, turn off the flame and drizzle some extra virgin olive oil. Give a final few tosses to emulsify the oil. • Serve the pasta on a plate and garnish with the crispy shallots. So simple and a taste reminiscent of Chinese scallion noodles, but with the texture and bite of spaghetti pasta.
