how to make mousse at home • Ingredients: • For the Hazelnut Chocolate Mousse: • • 200g of milk • • 4 egg yolks • • 2 Tbsp of sugar • • 2g of gelatin • • 110g of milk chocolate • • 110g of dark chocolate • • 100g of hazelnut praline • • 220g of heavy cream • • 3g of salt • For the hazelnut crunchy base: • • 55g of hazelnut praline • • 70g of paillete feuilletine • • 25g of butter • • 70g of dark chocolate • For the hazelnut praline: • • 200g of roasted hazelnuts • • 130g of sugar • • Instructions: • For the Hazelnut Chocolate Mousse: • In small saucepan, bring the milk to a simmer. In a separate bowl, mix sugar and egg yolks and temper with the hot milk. Pour back into the saucepan and cook until reaches 180F(you made custard). Strain the custard over the chocolate and add praline and gelatin. Blend with hand blender until you emuslify the chocolate and custard. • Whip the heavy cream until medium peaks and fold in the cremeux. • For the hazelnut crunchy base: • Melt the chocolate and butter over a bain marie. Stir in the praline and the feuilletine. Use Immediately. • For the hazelnut praline: • Caramelize the sugar and then add the roasted hazelnuts. Pour over a sheet pan and leave to cool down. Add to a food processor and blend until you obtain a praline. • Assembly: • Place the crunchy base in the mold and let it set in the freezer for 30mins. Pipe in the mousse and let it set in the freezer for 3 hours and then place it in the fridge.
