In this article, I am going to show both ways; how to boil chicken pieces and chicken breasts with delicious broth. • You'll love having both and broth ready to add to your meals and soups! • Chicken Pieces and Chicken Broth for Mole: • Ingredients: • 5-7 medium or large chicken pieces with skin and bones • ½ small onion • 2 large garlic cloves • 2 bay leaves • ½ teaspoon oregano • Salt to taste ( kosher salt, a tablespoon) • Preparation: • 1- In a large pot, add the chicken pieces and cover with clean water. At least 3 inches above the chicken • *Leave enough space to avoid spills. • 2- Add the ingredients salt, oregano, garlic, bay leaves and onion. • 3- Put the lid on and bring it to a boil (25 min approx). • 4- Once it starts to boil, slightly offset the lid to avoid spills. Then, cook for 35 minutes (with the pot partially covered). Stir while cooking and maintain a medium boil. • 5- After 35 minutes, turn off the heat. • *Optional: remove the skin from the chicken pieces. • 6- Strain the broth to have it clean and ready to use or save for the next preparations.
