Farro Salad

Farro Salad makes a great side dish. Add grilled chicken or shrimp, and you have a delicious meal. • 2 cups rinsed pearled farro* • 4 cups water • 2 Tsp kosher salt • 5 plum (Roma) tomatoes, seeded and chopped • 1/4 cup chopped scallions • 1/4 cup fresh basil, chopped • 1/2 red onion, chopped • 1 clove garlic, diced • 1/4 olive oil • 2 TBSP balsamic or wine vinegar • Salt and pepper to taste • In a medium saucepan, add water, farro and salt. Cover and bring to a boil over high heat. • Reduce heat to medium-low and simmer for 25 minutes. • Transfer to a large serving bowl. • In a small bowl, combine tomatoes, scallions, basil, onion and garlic. • In a separate bowl, whisk oil and vinegar together. • Pour dressing over tomato mixture. • Toss tomato mixture with prepared farro. Serve. • *If using whole farro, place in a bowl with enough water to cover it. Refrigerate overnight. Drain and follow recipe.
