Let’s make some easy pastrami.⠀#shorts #pastrami • ⠀ • I picked up this brined corned beef at my local Mariano’s Market and soaked it in cold water for about 3 hours. This will remove some of the salt from the beef and ensure it’s not too salty. The outside was seasoned with black pepper only and it hit the @biggreenegg at 225 degrees indirect, with some hickory wood chunks.⠀ • ⠀ • I smoked it until it hit around 170 degrees, and then placed it in a foil pan on a wire rack with a few cups of hot beef stock. Cover the pan with foil and put it back on the grill to continue cooking until probe tender, around 205 internal or so. Total cook time was around 8 hours. Pull, rest 1 hour, then slice and enjoy!⠀ • ⠀ • And it turned out delicious! This is my go to method for making easy pastrami.
