150 g of flour, • 100 g of potato starch, • 200 g of butter, room temperature, • 200 g of powdered sugar, • zest and juice from 1/2 lemon, • 4 large eggs, room temperature (yolks and egg whites separated), • 1 tsp of baking powder, • a big pinch of vanilla powder, • 4 tbsp of sour cream, levelled, • some powdered sugar for dusting the cake or few tsp of lemon juice and few tsp of powdered sugar for lemon glaze • Beat the butter, until fluffy. Gradually, one by one, add egg yolks, mixing well after each addition. Gradually add sifted powdered sugar, followed by vanilla, zest and juice from a lemon. Mix well. Add sour cream, mix. Beat the egg whites, until stiff peaks form. Gently fold into the mixture. Sprinkle sifted flour, starch and baking powder over the batter and mix briefly. Place the batter into very well greased and sprinkled with flour bundt pan (approx. 2 l). Bake in 170 C for about 40 minutes. Sprinkle with powdered sugar or pour over some lemon glaze.
