Zesty Green Tomato and Tomatillo Enchilada Sauce

To help grow this channel consider donating to Patreon: • / tappar • If this is your first time here please click like and smash that subscribe button! • Use this recipe to get rid of all of your end of season unripened tomatoes and tomatillos! • I don't measure ingredients however the exact quantities aren't particularly important, the main ingredients are: • Green tomatoes/tomatillos- I always make this when I am pulling the plants out so I will also include any ripe fruit as well • Onions (around 4:1 tomatoes to onions. I freeze them for about 20 min before cutting to help with the tears) • Peppers (highly variable ratio. I use hatch or whatever I have in the garden, just be mindful about making it to spicy, taste and add more at the end if needed) • Apple cider vinegar (I filled about 1/3 of the pot with this over the uncooked veggies) • Seasoning: Salt, pepper, cumin (I use a lot of this) and garlic • I also used some dried hot peppers as my hatch chilies didn't have any real heat to them. • I started this in two pans and cooked enough liquid out of it as a very slow simmer to make it fit in just one. Keep stirring and scraping the bottom of the pan to prevent burning. It takes quite a while but the unripe fruit needs the time, and it helps develop the flavors. If I wasn't making a video I would have waited until later to blend the contents since the thicker the mixture the messier reducing it becomes (bubbles coming up through it splash out) • I freeze this in ziplock bags, think a bag for each batch of enchiladas you are going to make. • Check out my other videos and please like/subscribe if you enjoyed, and I would love to hear feedback! • Music: Mikey and Matty Second Son (Filmora music collection)
