This is a very classic Kerala dish made with Ash Gourd Cowpeas (Red). • This is a less spicy dish so everyone including children enjoys it. So why not try out this..? • #ഓലൻ • #Kumbalanga_Vanpayar_Olan • #Olan_Curry • #shorts • #onam_recipes • #curry_world_by_devas_mom • INGREDIENTS • ----------------------- • Cowpeas/Vanpayar - 100gm • Ash Gourd - 1 Small • Salt- 1/2 tsp • Green Chilli- 2 • Ginger- 1 small piece • Coconut Milk - 500ml (Thick Thin) • Coconut Oil- 1 tbs • Curry Leaves - 1 handful • Water - 3 glasses • • PREPARATION • ---------------------- • Soak the Cowpeas for 5 hours / an overnight. • Wash cook well till 2 whistles. Keep aside. • Cut the Ash Gourd, Remove the outer thick skin inner seeds. Cut it into small cubes. • Add grated Coconut in mixer jar along with a glass of Water, grind well extract the thick milk. • Add a little more Water again to the same Coconut grind well. Then extract the second Milk. • Keep aside. • Cook the Ash Gourd by adding Salt, Green Chilli, Ginger in Thin Coconut Milk(Second Milk) • When it cooked well, add cooked Cowpeas Thick Coconut Milk (1st extracted). • Do not boil after pouring the 1st Milk. Just heat switch off the flame. • Add Curry Leaves Coconut Oil. • Cover with a lid rest for 1 hour. • ( This will help the dish to absorb the flavour of curry leaves and coconut oil.) • Serve and Enjoy!
