Here is one my favorites, a roasted vegetables recipe. This recipe is a great way to use up any veggies you have in your fridge. • Ingredients • 1. 1/4 cup extra virgin olive oil • 2. Sea salt and pepper to taste • 3. Veggies, changes depending on what I have. In this video I used- • 1 large onion • 2 red bell peppers • 1 medium sweet potato • small bag of brown mushrooms • 2 medium zucchini • 2 golden beets • handful of garlic • 4. 3 organic sausages (omit this if you want it meat-free) • Directions • 1. Preheat oven to 450 • 2. Cut veggies into bite size pieces • 3. Place veggies into roasting pan • 4. Cover veggies with olive oil and season with salt and pepper • 5. Into the oven for 30 min (50 min if not using sausage) • 6. While veggies are cooking, cut sausage into bite size pieces • 7. Place sausage on top of veggies after 30 min of cooking • 8.
