Overlooking the Atlantic Ocean it boasts many interesting dishes and the fish cataplana is a fantastic example. • I got to taste it when I was in the Algarve. It is a very fragrant tomato-based soup which is made with the addition of fresh fish. Monkfish, dogfish and prawns are almost always present in this preparation, but the interesting thing is that among the ingredients we also find raw ham, spicy salami, aromatic herbs and whiskey! • I like the seafood cataplana recipe because I really love experimenting with combinations that might seem unusual but that always give excellent results. Portuguese cuisine is very good at this. • The cataplana is a very original dish, which owes its name to the pan in which this preparation was made, which dates back to the 1200s. • The pot in which it was cooked was a kind of Tajine: before, in fact, it was made of terracotta but had a wider bottom than it and was provided with a lid, in order to have a homogeneous cooking. • Today it can also be done with commonly used pots, but the origin of this dish fascinates me so much! • ► Ingredients to prepare the fish cataplana: • Monkfish 400 g • Spinarolo 400 g • Shrimp tails 200 g • Peeled tomatoes 350 g • Green peppers 200 g • Spicy salami 100 g • Raw ham 100 g • Onions 100 g • White wine 200 g • Whiskey 15g • Bay leaf 1 • Garlic 1 • Hot peppers 1 • Parsley 1 sprig • EVO oil 3 tbsp • Salt to taste • The recipe on the site: https://www.casapappagallo.it/ricette... • In Casa Pappagallo there is always something boiling in the pot!
