The first 500 People to sign up via my link will get two FREE months to Skillshare Premium: https://skl.sh/kusinachef • This video was sponsored by Skillshare • No Oven Brazo de Mercedes • Meringue: • 10 egg whites • 1 cup white sugar • 1 tsp white vinegar • 1/2 cup powdered sugar • Filling: • 5 egg yolks • 390g condensed milk • 154ml evaporated milk • 1 tsp calamansi juice • 1 tsp vanilla extract • 1 tsp butter/margarine • Procedure: • 1) Preheat big pot/cauldron over high heat for 10-15 min. • 2) Meringue: Beat egg whites until foamy • 3) Add white vinegar. Beat until soft peaks form • 4) Gradually add white sugar and beat until stiff peaks form • 5) Spread the meringue evenly into the cake pan(with parchment paper) • 6) Place a wire rack inside the cauldron/pot • 7) Place the cake pan on the wire rack • 8) Cover and cook for 15-20 min. over med. heat • 9) Turn the heat off. Cover again and let it cool gradually for 30 min. inside • Filling Procedure: • 1) Filling: In a pan combine egg yolks, condensed milk, evaporated milk, calamansi juice and vanilla extract. • 2) Turn the heat on and cook over low heat. • 3) Continue stirring until it's thickened. • 4) Turn the off and add butter. • 5) Set aside and cool completely. • Assemble: • 1) Generously dust the meringue with powdered sugar • 2) Place a parchment paper and a wire rack on top • 3) Invert and remove the pan • 4) Gently peel the parchment paper off • 5) Add the filling • 6) Roll it • 7) Chill or freeze until ready to serve
