In a microwave-safe bowl, mix sticky rice flour and milk together. • 2. Microwave on high for 30 seconds until it becomes opaque looking and feels bouncy. • 3. Keep aside. • To make donut dough: • 1. In a mixing bowl, add all the ingredients plus the starter dough. (You can add in the flavours at this point) • 2. Use a stand mixer or knead by hand until dough is formed. • 3. Lightly flour a surface and roll out dough until 1/2 inch thick. • 4. Use two different sized cookie cutters to cut into donut shape. • To Fry: • Fill oil to about 1-2 inches deep in a frying pan and gently place donuts into the hot oil. Fry until puffed and golden brown. • Makes about 12 medium-sized donuts. • CHOCOLATE ICING: • 1 cup (125 grams) icing sugar • 1/3 cup (75 grams) cocoa powder • 4 tbsp (60 ml) milk • 1. Sift the icing sugar and cocoa powder into a mixing bowl and add milk one tablespoon at a time until well combined. • STRAWBERRY ICING: • 1/4 cup (36 grams) fresh or frozen strawberries • 1 cup (125 grams) icing sugar • 3 tbsp (45 ml) water • 1. In a saucepan, cook strawberries with water for about 10 min until soft. • 2. Remove from heat and mash strawberries with a fork. Let it cool for 10 to 20 minutes. • 3. In a bowl, sift the icing sugar and mix with the strawberry puree. • Optional: add whipped cream for a lighter pink colour. • CARAMEL GLAZE: • 4 tbsp (56.8 grams) unsalted butter • 1/3 cup (65 grams) brown sugar • 3 tbsp (45 ml) milk • 1/2 tsp (2.5 ml) vanilla extract • 1. In a saucepan over medium heat, melt butter, brown sugar and milk. • 2. Bring to a boil and then simmer for 3 to 4 minutes. • 3. Remove from heat and add vanilla extract.
