And this is an easy—you might even say lazy—lower sugar version. • Making simple syrup is so easy, and you can put a lot of different flavors in it. I’m going to show you one of my favorites, which is ginger, but you can do mint, you can do basil, whatever herbs or flavors you like, and then you can use the simple syrup to infuse your cocktails with flavor or iced tea or lemonade or even drizzle it over ice cream. And you can keep it in the refrigerator for weeks and weeks, so you can make a bunch at once. And all you need are three ingredients: you need water, you need sugar, and ginger, or whatever flavoring agent you use, and it just takes a couple of minutes to prepare. • One thing I’m going to show you—so I’m using ginger—and the reason I call this a lazy version is because you don’t even need to peel the ginger, which is kind of a pain because it’s all nubby—in fact I cut my finger doing it earlier—because it’s just going to be strained out later. So you’re going to just rough chop it, throw it in there, and the flavors are going to fuse together, and then you’re going to strain that ginger out. Actually, you can eat it then, it’s really delicious! But, you don’t need to peel it, even though people often do. • All you need to do is bring your water to a boil. I have a cup and a half of water, I have a cup of sugar, and I have two ounces of ginger. You can measure it; I have a measurement below, but having a simple kitchen scale, you can just weigh it like here, and you’re going to feel like a real profesh. • Once you’ve let it simmer or steep for 30 or 40 minutes, or if you’re busy, you can even leave it on longer, it’s no big deal, it will just get even more infused with that ginger flavor, all you have to do is take a fine mesh strainer and strain the solids out so all you’ll have is that delicious simple syrup. • So now you have your ginger simple syrup, which you can use to make cocktails or store it in the refrigerator, or you can give it as a gift. This makes an awesome holiday gift, and to me, the best holiday gifts that I can give are ones that I make myself because they’re consumable and people know that it came straight from your heart, straight from your kitchen, so I’m going to give this one to my videographer Abi for all of her hard work this year.
