Healthy Vegan Pancake

Vegan Pancake Recipe • Ingredients: • Grapeseed oil for frying • 1 cup oat flour • 2 tsp baking powder • 1/2 tsp cinnamon • Pinch on salt • 1/2 cup oat milk • 1 tbsp apple cider vinegar • 2 overripe banana • 1/4 cup applesauce (store-bought or homemade) • 1/2 cup pureed pumpkin (store-bought or homemade • Method: • Mix milk and apple cider vinegar and put it aside, and let it sit for 5 minutes. Mix oat flour, baking powder, cinnamon and salt and set aside. Mash the bananas, then add pureed pumpkin, apple sauce and the milk and apple cider mixture, then mix it to the dry ingredients. Just fold it and don’t over-mix. Let it sit for at least five minutes to let the mixture thicken. • Hit the stove to medium heat with the pan on top and wait until it is hot enough, then put oil. When the oil is hot enough, start placing some batter, gently flatten, reduce the temperature of the stove just below medium to avoid burning the pancake before it is cook; when it’s a little brown, flip carefully.
