Grind into a powder. Add the powdered blue food dye. • 2) Sift out any leftover granules on a sheet of parchment paper. • 3) Set aside in a bowl. • Equipment • Spice grinder • Tamis • Parchment paper square • Medium Bowl • Step 2: Make the Polenta Mix • Ingredients • ½ cup water • 1 tube pre-made polenta • 2 tsp cornstarch • ½ tsp salt • ¼ tsp baking powder • 1 box of cornstarch • 1) Add water to the medium sized pot. Allow to simmer. • 2) Using a whisk, break up the tube of pre-made polenta into the hot water. • 3) Once it has become a smooth paste, add in the corn starch, salt, and baking powder. • 4) Allow to cool slightly, and put in a piping bag with a large round tip. • 5) Coat the surface of a sheet pan with LOTS of corn starch. Pipe large lines of your polenta mix onto the corn starched surface. Dust the top of the lines with more corn scratch. • 6) Using a bench scraper or butter knife, slice the polenta into Cheeto-lenghed tubes. • 7) Using your hands, begin to make Cheeto shaped pieces. Add back into corn starch. • Equipment • Whisk • Medium size pot • Silicone spatula • Piping bag + Large round tip • Sheet pan (2) • Butter knife • Step 3: Fry and Dust • Ingredients • 1) Heat up the deep fryer to 400 degrees. • 2) Begin to drop in the pieces of Cheeto until they puff and float, about 45 seconds. • 3) Remove and place on a sheet pan with a rack to drain off any excess oil. • 4) Dust with Freezing Cold powder. • 5) Eat with caution ;) • Equipment • Deep fryer • Spider • Sheet pan with rack
