This is the healthiest banana pudding you've probably ever made and it's delicious! • Whole Food Banana Pudding (Dairy, and Gluten Free) • (Double Recipe for a Bigger Batch this is a small-medium batch) • 2-4 Sliced Bananas • The Pudding • ½ cup Japanese sweet potato/ cooked + mashed (add another 1/4-1/2 cup for thicker pudding) • ½ cup dairy free yogurt ( vanilla unsweetened or sweetened, strain it for thicker pudding) • (Other options: you can also use plain yogurt add an extra tsp of vanilla extract) • 1-3 tbsp plant milk • 2-4 tbsp Natural Sweetener of Choice • (Options: Maple syrup or agave ,DATES, maple/date sugar) • 1 tsp Vanilla extract ( you can also try banana extract) • You will need Additional Yogurt for assembling. • • Almond Vanilla Wafers • 2 tbsp cashew butter • 1 tbsp water • 1 tsp vanilla extract or paste (good quality) • 2 1/2 tbsp agave nectar or maple syrup • 1 cup almond flour • • Bake cookies for 10-12 minutes at 350F, let cool completely before assembling the banana pudding. Layer with pudding cookies and yogurt, top with more yogurt or dairy free whipped cream. • • Chill Banana Pudding for a couple hours or overnight.
