Bluegill Tacos from the lake to the plate

I’ve made a fish taco episode before, but I found a new recipe that’s intriguing. I picked up all the ingredients at supermarket, but I forgot one. You guessed it. The fish! Let’s see if we can go from the lake to the plate with some bluegill! See the recipe and music credits below: • The lure used was a 2 inch amber GrubZ by Z-Man Fishing Products, Inc. It was attached to a black and chartreuse 1/16 ounce Gopher Mushroom Head Jig. • Recipe: • 2/3 cup sour cream • 4 TBS of mayonnaise • 2 tablespoons lime juice • 2 tablespoons lemon juice • salt and ground black pepper to taste • 2 jalapeno peppers • 3 1/2 cups shredded cabbage • 6 green onions, thinly sliced • 4 to 5 tablespoons olive oil • 1 pound bluegill fillets • 6 (7 inch) Mama Lupe’s low-carb tortillas • 1/2 cup chopped fresh cilantro • Directions • Mix sour cream, mayo, lime juice and lemon juice together in a large bowl; season with salt and black pepper. Reserve about half the mixture in a small bowl for dolloping on the tacos. Mince one jalapeño pepper. Cut the other jalapeño in half and save for later. In the large bowl, toss cabbage, green onions, and minced jalapeño in remaining sour cream mixture until slaw is well mixed. • Heat olive oil and jalapeño halves in a large skillet over medium heat; swirl oil to coat skillet evenly. Season fish fillets with salt and pepper. Pan-fry fish in the skillet until fish is golden brown and easily flaked with a fork, 4 to 5 minutes. Discard jalapeño halves. • • Heat tortillas in the microwave on high until warm, 25 seconds or more until nicely warmed. • • Serve fish in warmed tortillas topped with cabbage slaw, reserved sour cream mixture, and cilantro. • I was inspired by the recipe I found here: http://m.allrecipes.com/recipe/221936... • Music is “Polca A Villazón,” by Lelis Molina. In English I would say polka of Villazón. It is actually a Bolivian song (Villazón is a town in Bolivia) but it was so enjoyable and much like mariachi in style, I thought it would work well here. Also, it was free! I hope the Bolivians pardon me for using their music for a taco recipe.
