It is a rustic side dish, with an intense aroma which is mainly made with sauerkraut, bacon and onion. But what makes this recipe with sauerkraut really interesting is the presence of some spices such as cumin and pepper which give a very particular aromatic touch to everything. The thyme then instead gives a pleasant fresh note that balances a lot in my opinion. Then the contrast between the pungency of the sauerkraut, the sweetness of the onions and the flavor of the bacon is fantastic!
