HOW TO BRINE A TURKEY HOLIDAY BASICS

I previously shared how to make a Classic Turkey Brine gift in a jar which you can find here; http://bit.ly/2AsA2Nb This is what I used to brine my turkey. The addition of a few other aromatics as well as some water and ice and you have the building blocks for an amazing, tender, moist turkey, the likes that you have never tried before if you haven't ever enjoyed a brined turkey! Brining allows the bird to release it's own water then through osmosis take up the flavored brine making it super moist and juicy. I love this turkey and hope you do too! • The secret to brining is patience. You can brine for a little as 8 hours or up to 36 to 48 hours, depending on the size of your bird. My turkey was 19 pounds so I brined mine for nearly 24 hours. It was perfectly juicy and delicious after it was roasted. In this video I am sharing how to make the brine, prepare the bird and give you some tips that I have found helpful over the ten years or so that I have been brining my turkey. • Tip number one is to have some 5 gallon zip lock bags. These are typically found in the section of the big box store where you will find vacuum bags for clothing storage. Think of looking around where they have the clothes hangers and ironing boards as a place to start. If you can't find them I have left a link below where to find them online. I bought mine at Walmart. • Tip number two: double those bags for insulating power and have a clean cooler on hand to store the bird. I am fortunate that the weather has turned cool enough that I was able to leave the turkey in the cooler on my deck overnight. As you can see in the video, the ice was still icy cold when time came to rinse the bird. That brings us to tip number three: rinse the bird well with clean, cool water then dry, dry dry. If you have time and have finished the brining process a day ahead, you can air dry your turkey in the fridge by placing it in the roasting pan and in your refrigerator uncovered. This will help to dry it out and make the skin extra crispy and good when you roast. • You will not want to keep the brine for anything after it has done it's job. Toss it down the drain but never in your compost because, meat is a no no and you don't want those turkey juices mucking up your compost. • This is as simple as it is to brine a turkey!
