#Shorts #efunoodles • Start by blanching enough e fu noodles for 2 persons in boiling water the noodles are softened. Strain and retain some of the noodle water. • In a wok, add 1 tsp lard oil and heat up the wok. Once the lard oil is hot, add 1 clove of minced garlic. Stir fry until the garlic is aromatic. • Add 8 to 10 sliced medium sized mushrooms. Fry for a few minutes. Add 2 ladles of stock of your choice, or from the noodle water. Bring the mixture to a boil. • Season with 1 tsp light soya sauce, 1 tsp dark soya sauce and some Sarawak white pepper. Add the blanched noodles and braise the noodles for around 2 to 3 minutes. • Once the noodles have absorbed most of the liquid, give the noodles a good toss and mix. Add chopped chives and lower the heat. Add fresh pepper and 1 tsp lard oil. • Toss and mix the noodles quickly to emulsify the lard. And that is it. • Simply pour onto a plate and enjoy. So simple yet highly delicious.
