There are so many recipes of Meskouta because every Moroccan family has its own way of making it. We are going to make the yogurt version, some people prefer to replace the yogurt with orange juice. All the measurements are based on the cup of yogurt, so when I say 1 1/2 cup of sugar, I measured it using the yogurt cup. Meskouta is a very simple recipe, so make it your own by adding your favorite ingredients such as almonds, walnuts, chocolate chips, cover it with jam, etc. whatever you feel like. Serve Meskouta with milk, coffee, or Moroccan mint tea. If you have any leftovers, which I doubt, just cover them with foil and place them in the fridge. Pop the cake for 10-15 seconds in the microwave before serving again.
