Great food is universal - cultures around the world since the dawn of time have used a meal to bring people together, and we’re all about celebrating all cultures that celebrate the love. One of the most universal dishes warming up hearts around the world? Fried chicken! A culture and community we admire a ton is from the mighty people of Japan - they have style, that can be loud or subtle, creative and efficient, and just plain fun, but there’s nothing plain about this sandwich, for real. Now, we make a fantastic regular fried chicken sandy, but the Japanese style, using panko breadcrumbs, is one of our absolute favorites on Earth. Light panko breadcrumbs on evenly pounded chicken with a creamy, Kewpie (Japanese mayo) and a little smokey flavor with chipotles gives the sandwich a bite that can’t be beat, with some cabbage to give us another texture. Like our boy Godzilla, this is a Japanese original that changes the game. Get that fryer roarin’. • • Ingredients • Milk bread, cut into 8 thick slices (if you can’t get milk bread, a thick, sturdy white bread works) • 4 chicken thighs, pounded or rolled thing, cut to be a little bigger than the bread (any leftovers, save and fry just to snack on while eating) • 1 ½ C of vegetable oil • 1 C Panko bread crumbs • 2 tsp of garlic powder, divided • dash of salt and pepper (twice) • ½ C all-purpose flour • 3 beaten eggs • ½ C Kewpie Mayo (full fat mayo works if you can’t find this) • dash of lime juice • 2 Tbsp sesame oil • 2 Tbsp of rice wine vinegar • 2 Tbsp light Soy sauce • 1 ½ tsp of Japanese BBQ sauce (teriyaki works in a pinch) • ½ C purple/red cabbage, finely shredded • ¼ C shredded carrots • 4 green onions, sliced • ¼ tsp red pepper flakes • Splash of dill pickle juice • • Directions • Mix the panko, 1 tsp of garlic powder and salt and pepper • Mix the Kewpie, lime juice and chipotle sauce and set it aside • Mix the cabbage, carrots, sliced green onions, rice wine vinegar, light soy sauce, pickle juice, 1 tsp of garlic powder ¼ tsp of red pepper flakes, and dash of salt and pepper, throw in the fridge • If you haven’t pounded your chicken or rolled it out in cling wrap, do that now, and then cut into sizes a little bigger than your bread slices • Set up 3 bowls, one where you mix the panko, garlic powder together, another where you mix the flour and salt and pepper, and then one just for the eggs • Cut the crusts off of all of your slices of bread • In a large skillet, heat your oil to 350 degrees • Dredge your chicken into the flour, then the eggs, then the panko, fry ‘em one at a time until golden brown • Rest the chicken on paper towels and salt immediately after it comes out of the fryer • On the bottom slice of your bread, spread the cabbage/carrot mix • On the top slice, spread the chipotle/kewpie spread • Place 1 chicken thigh onto the bread • With a sharp knife, cut the sandwich into thirds if you’re into it, and if you do or don’t… • Sink your teeth into the might Katsu Sando • • Bonus Tip - This works well with veal or even thinly pounded beef, if you wanted to replace the chicken, and the slaw is awesome as a salad on it’s own, too. • • Want to get more restaurant-quality recipes?
