Side dishes that work well with this include rice, polenta, potato mash, garlic bread and much more. • If you want the full list of ingredients that is required to make this delicious chicken cacciatore then you can find it below. • • 1kg (35 oz) of chicken thigh (Most cuts will be fine) • • 1 onion, sliced • • 2 tsp. garlic, crushed • • 1 Red Bell Pepper, sliced • • 2 Cups mushrooms, sliced • • ¼ cup red wine • • 1 tsp. sugar • • 2 Tbsp. tomato paste • • 2 cans crushed tomatoes • • ½ Tbsp. dried basil • • Salt Pepper • • ½ cup pitted Kalamata olives (Optional) • Wine in the slow cooker doesn’t cook down as it normally does when cooking over a high heat. If you’re not a huge fan of wine, then I highly recommend to leave it out as a lot of the flavour and strength will remain even after 8 hours of cooking. • If you’re adding the olives, then it’s important to be aware that they will add a fair bit of salt to the dish. This makes it important to hold back on the salt until the end so you don’t accidently over season the dish. • As I mentioned in the ingredient list above the cut of chicken that you end up using doesn’t matter. Basically, any cut will work just fine but if you’re looking for the best results I would go breast or thigh. • Now I hope that this easy slow cooker chicken cacciatore cooks out to be as great as it did for me.
