This is KitchenAid’s food processor attachment. It can do all the things the larger, electronic appliance can do. It comes along with a slicing disk, a reversible shredding disk, a julienne disc, and a dicer kit. For my recipe today, I’m going to need two ingredients that I’ll use the food processor for. Later I’m going to shred some Mozzarella, so I’ll load in the shredding disk, but right now I’m going to slice up these beautiful zucchini, so I’ve already loaded in the slicer disk. First you’ll notice a lever on the front of the machine. This is KitchenAid’s exact slice system. It allows me to adjust the height of the blade so I can control the thickness of the cut. A two-in-one food pusher lets you control what goes in, and how. Use the small feed tube for things like single carrots or celery stalks. Everything else will go in the larger open. If you’re putting cooked meats in here like pepperoni for a pasta salad, you want to make sure that it’s very cold ahead of time. That’s also the case for a more firm cheese like cheddar or Parmesan. But today I’ll be shredding Mozzarella so I find the best results happen when you freeze the Mozzarella for about 2 hours before you slice it. In general, the harder the food you put inside the food processor, the higher the mixture speed will have to be and you’ll also have to put a little extra pressure on the pusher. Now if you’re doing something soft life fruit or some cheeses, lower speed and less pressure brings about the best results. At the end of the day when it comes time for cleanup, everything except the housing itself goes into the top rack of your dishwasher.
