Lemon Posset with Blueberry Compote and Crumble • Ingredients: • For the Lemon Posset: • • 2 Cups of Heavy Cream • • 50g of sugar • • 1 tsp of vanilla paste • • Zest of a half a lemon • • 3 Tbsp of lemon juice • • 1/2 a sheet of gelatin • For the Lemon Crumbs: • • 80g of flour • • 60 g of butter • • 40g of sugar • • Zest and juice of half a lemon • Recipe: • For the Lemon Posset: • Combine cream, sugar, vanilla paste and lemon zest in a sauce pan. Bring to a simmer and then add the gelatin and the lemon. Strain and pour in desired serving bowl. • For the Lemon Crumbs: • •Combine in a bowl all the ingredients together and mix until fully incorporated. Divide into small balls and place on sheet pan. Bake at 350F for 15mins. Make sure to mix every 4 minutes for even cooking and color. • For the Blueberry Compote: • Add 1 cup of blueberries, 3 tbsp of water and 3 tbsp of sugar to a sauce pan. Cook for 5mins and the add a squeeze of lemon juice.
