Indian summers are incomplete without Kokum/Mangosteen juice or Sherbet. This Kokum Juice recipe is a popular in Goan and Konkan households. Kokum Sharbat is also common at every store in Goa. • The outer cover of the fruit is dried in the sun to get what we call as dried kokum or amsol. After drying, the blackish purple yield has a sour taste and a sweetish aroma. I have used Dried kokum if you are privileged enough you can get your hands on fresh kokum. • INGREDIENTS • 1 cup kokum fruit chopped, or 1/2 cup dried kokum • 2 cups water • 1 cup sugar • 1 teaspoon roasted cumin powder • 1 to 2 pinches black salt or salt, optional • PROCESS • *Boil sugar, dried kokum, salt, black salt , cumin powder along with water for 15-20 mins until it's reduced by 1/2. • *Strain the kokum and grind into smooth paste add the kokum water if needed. • *Strain whole mixture along with the kokum water we kept aside.
