Greek Orzo Salad Recipe

Ingredients • 1 cup orzo pasta • Water (for boiling) • 1 tsp salt (for boiling) • 1 tbsp olive oil • Zest of 1 lemon • Juice from ½ a lemon • 3 cucumbers, diced • 1 handful cherry tomatoes, halved • 1 handful scallions, chopped • 1 handful fresh dill and cilantro, chopped • 220g feta cheese, crumbled • ⅓ cup Kalamata olives, sliced • ¼ tsp black pepper • ½ tsp salt • Instructions • 1. Bring a pot of salted water to a boil. Add orzo and cook for 10 minutes or until al dente. Drain and add olive oil, lemon juice, lemon zest mix well and let it sit. • 2. Add cucumbers, tomatoes, scallions, dill, cilantro, feta, and olives to the bowl.Season with black pepper and salt. Toss everything together to coat evenly. • 3. Serve chilled or at room temperature. • 4.
