LET'S MAKE AUBERGINE PIZZAS • Today we prepare a beautiful and interesting, as well as easy and quick recipe • Eggplant is a product that is always present on our tables, and can be cooked in a thousand ways • I propose a method of preparation that you have probably never done because we will make small pizzas with them • It doesn't take much to have a dish that can be useful both as an appetizer or as an addition or side dish to other dishes • What can I say, try to make them and you will see that you will never stop eating them • I describe how to proceed: • The first thing to do is to buy some nice big aubergines that we will later cut into slices, which we will put in a container with salt (so as to lose some vegetation water) • Now let's start the breading of the aubergine slices, but first we oil a baking sheet • We pass the slices first in the egg and then in the breadcrumbs, finally put them in the size • When you bread all of them, then on each slice we put the tomato puree (which we previously cooked with salt and oil), and the oregano • At this point we give the first cooking in a hot and static oven at 200 degrees for 15 minutes • After 15 minutes in the oven we put the oil for each slice, then the mozzarella .... if you want stuffed with anchovies and black olives!
