#sourdough #starter #sourdoughfromscratch #series #SHORTS • • Day one • From today I will make 1 minute short video to guide you trough the process of creating your own sourdough and I'll explain all the process day by day. • At the end ill create a playlist where you will be able to see all the making in less than 15 minutes • All you will need is containers. Go for glass or food grade plastic, something that you can see trough • A rubber spatula or a tablespoon • A digital scale • Flour, use fresh unbleached flour white, whole wheat, whole grain, rye, spelt etc. • Water pure that don't contain clorine or other chemical if possible • In a container mix: 20 grams white flour, 20 grams whole grain flour or rye or spelt or the one you prefer with 40 grams of water . • keep the container cover with a loose fitting lid or with a cloth at room temperature, something in between 20 to 26 degrees Celsius. • When you add water to flour a fascinating process is set in motion. The microorganisms that live on the grain, which has been grounded on the flour, begin to digest the starches and sugars in the flour, producing gas and enzymatic activity. • This process is call fermentation. Fermentation renders flour more digestible by braking down Phytates present in the grain and predigesting gluten and the starch. • See you tomorrow
