#كبة_الحلب #kubbaHaleb #iraqifood #cffrecipes #ricedumplings #riceballs • Ingredients for the Rice Dough:- • 2 cup white rice ( not Basmati rice) washed and soaked for 10 minutes • 3 1/2 cup water • 1/2 tsp salt • 1/2 tsp turmeric powder • 1-2 egg (optional) • -In a medium pot over high heat, mix water, salt and turmeric and bring to boil. • -Add drained rice and let come to boil again then lower the heat to low and cook for 20 minutes or until the rice is soft. The rice should be very soft and kind of mushy. should be mushier than a regular rice that we eat. • -After the rice is cooked turn off the heat and let it come to room temperature. • -When the rice is cooled down, either you use a masher to mash the rice or a food processor or you can knead it like you are kneading any dough until the rice becomes like dough consistency but not that smooth. • -Always when making fried kubba of any kind, it is a good idea you fry one before you precede to make all of them before frying. • -So In case the kubba breaks a part while frying you can add one egg or two and mix well and knead once more. • • Ingredients for the Filling:- • 1 lb. ground meat with a little fat • 1 medium onion chopped very small about 3/4 cup • 1 tsp salt • 1/2-1 tsp black pepper • 2-3 tsp 7 spices (Baharat) • 1/2 cup fried slivered almonds (optional) • 1/2 cup fried golden raisin (optional) • -Cook the meat until browned. Drain any excess oil. • -Add vegetables oil about 2-3 Tbsp and cook for a few minutes. • -Add the chopped onion and cook for a few minutes until the onion is tender. • -Add the spices, salt and black pepper and mix until fragrant. • -Add slivered almond and raisin and mix. • -Remove from heat and let cool down and set aside until needed. • • Making The Dumpling (kubba) :- • -It is easier to have a bowl of iced water to wet your hands with so the dough won't stick. Or you can use oil also. • -Take a golf-sized ball of dough or a little bigger and make a ball shape with your two palms then use your index finger to form a hollow in the middle of the ball. • -Fill it with 2 teaspoon of the filling and seal then form it into an oval shape with slightly pointy ends. • -Fry in deep hot oil for a few minutes until golden brown. Everything is cooked.
