Cooking Katlesi: Instructions • 1. Peel, cube and boil the potatoes in salty water until soft. Add black pepper, Mash the potatoes and set aside. • 2. In a pan, add half of the onion and the 2 Table garlic and ginger spoons, stirring until brown. Add the meat, in medium heat and stir until brown and all the water has dried. • 3. Remove from heat and wait for it to cool. • 4. When cooled, mix the rest of the ingredients in the meat, completely stir then add the potatoes, and mix well. Make balls, to your desired size and place in the fridge for 3 hours or overnight. • 5. In a bowl, crack the eggs, mix well, and place the flour in a different bowl. Heat oil in a frying pan. Coat the balls in the flour then into the egg mixture and fry until light brown. Place on a paper towel to drain excess oil. • 6. Serve with salad and Thai chili. Enjoy • Preparing Tamarind Juice: Instructions • 1. Use your fingers to crack the brown tamarind shells and remove the stalk from the pulp. (if you are using the blocks, simply break them down with your hands) • 2. Place the pulp in a large heatproof bowl then carefully pour the warm water over the raw fruit. • 3. Allow the tamarind to sit in the water for 10-20 minutes so it begins to soften. • 4. Pour the contents of the bowl into a tall blender like a vitamix and also add fresh ginger now. Do this in batches if required to accommodate the volume of liquid. • 5. On the lowest setting, pulse the tamarind for 15-10 seconds then gradually increase the speed for about 30 seconds so the seed separates from the pulp. The liquid will be a dark cloudy brown hue and the seeds should settle at the bottom of the container. Repeat this step if necessary to ensure the seeds have pulled apart. • 6. Pour the tamarind juice into a mesh/cheese cloth or sieve and squeeze and strain the remaining juice. Work in batches if need be and add 1-2 cups more of water if you want to increase the volume of juice. • 7.
