Its taste is so good that you will totally fall in love with one bite only, trust us! 🍅😋 @cookingwithrocco • • For the Chicken: • 2 pounds bone in, skin on chicken thighs (about 4 pieces) • Salt and freshly ground black pepper • • For the Sauce: • 1/2 large sweet onion, sliced • 4 gloves of garlic, sliced • 1 tablespoon dried oregano • 1 tablespoon dried/fresh thyme • 2 red bell peppers, seeded and diced • 1.5 tablespoon tomato paste • 1 tablespoon Calabrian Chili Paste • 1/2 cup dry red wine (can sub for white wine) | optional • 1 (28oz) can of crushed San Marzano tomatoes, crushed by hand • • Can also swap the oregano and thyme for Fennel Seeds and Coriander Seeds. Season the chicken generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Once the skillet is hot, add the chicken skin side down and cook untouched (5 to 7 minutes), or until the skin is golden and pulls away. Once golden, flip the chicken and briefly brown the other side (about 2 to 3 minutes). Once browned, transfer to a plate and set aside. Using the same skillet, add the onions and cook until they're translucent (about 3 to 5 minutes). Then add the garlic, dried herbs, salt and pepper, and cook until fragrant (about 1 minute). Next add the bell peppers, tomato paste, and Calabrian chili paste, and cook until the peppers are soft and the paste turn to a dark red color. (about 5 minutes). If the vegetables look dry, add more olive oil as needed. If using, deglaze the pan with the red wine, and cook until it reduces by half (about 2 to 5 minutes). Add the tomatoes, crushing them by hand, and cook until the sauce slightly reduces (about 10-15 minutes). Once thickened, add the chicken back to the sauce skin side up. Bring the sauce back to a simmer, reduce the heat to medium-low, cover, and simmer until the chicken is cooked through (about 15 minutes, or until internal temp reads 165º).
