HERBAL ELECTROLYTE POPSICLE πΏπ§ • Refreshing, replenishing, and really delicious, this herbal electrolyte popsicle uses – you guessed it – cooling herbs. These herbs provide some of those important minerals, like sodium, chloride, potassium, magnesium, and calcium, that we sweat out in the hot summer. π₯΅ • πΊ Hibiscus – provides that beautiful pop of color, but also a dose of cool. As a cooling herb, hibiscus is perfect to brew for summer and get some much-needed antioxidants and a little vitamin C. • πΏ Mint – is also an excellent cooling herb that’s refreshing and provides a wonderful flavor when added to coconut water. • π₯₯ Coconut water – is an ultimate hydrator and provides thirst-quenching benefits as well. Coconut water is a great source of potassium and has magnesium and calcium too! • πΉ Rosehips – with a lightly floral and tart flavor, rosehips give dimension and zing to the popsicles plus a good boost of vitamins C, A, B1, B2, B3, and K! • π Fresh squeezed orange juice – provides calcium, magnesium, and potassium • π§ Salt – helps to retain all that needed hydration • π― Honey – gives you a natural sweetener • • INGREDIENTS • πΏ 2 tablespoons hibiscus • πΏ 1 tablespoon rosehips • πΏ 2 cups hot water • πΏ Juice from 2 fresh squeezed oranges • πΏ 2 tablespoons honey • πΏ ¼ teaspoon salt • πΏ 1 cup coconut water • πΏ Handful of fresh mint leaves • DIRECTIONS: • β¨ Place the hibiscus and rosehips into a quart-sized jar, add in hot water, and let infuse for 15 minutes. Strain herbs. While the liquid is warm, mix in your honey until dissolved. • β¨ Stir in orange juice and salt. Then place it in the refrigerator to cool down. • β¨ While the liquid cools, pour coconut water into your mold, filling halfway. Add in mint leaves and any other edible flowers.
