It makes an appearance at all Eurasian festivals, whether that’s Christmas, Easter, christenings, weddings, birthdays or funerals! • Sugee = semolina • This semolina and almond cake is a breeze to make, and is also a very forgiving recipe. There is no single authentic version, every family is going to have its own slant on it. • I like it plain, as it is, or perhaps with a light sprinkling of icing sugar. But sugee cake can also be used as a celebration cake, given its fairly sturdy nature.
