Spanakopita Triangles

I've created a really cool appetizer idea using the traditional Spanakopita pie filling. Instead of making the traditional pie, I thought it would be really cool to wrap it in phyllo dough and bake it into small sized bites. I really hope you enjoy the recipe! Melted butter • 1 Large onion diced • 1 Bunch fresh dill chopped fine • 1 Bunch scallions chopped • 1 Bag of cleaned and stemmed spinach • 12 Oz. Feta cheese crumbled • 4. Oz chopped garlic • 1 Box Phyllo dough completely defrosted • 2 Eggs • 4. Oz. Grated Parmesan cheese • Olive oil • Salt and pepper to taste • Procedure: • 1. In a large sauce pan, heat about 2-3 Oz. Olive oil over medium heat. • 2. Add the onions and garlic and saute for 2-3 minutes. • 3. Add the spinach and cook it all the way down. About 3 minutes. • 4. Add the dill and scallions and incorporate. Remove from heat and allow to cool completely. • 5. In a separate bowl, Combine the Feta and Parmesan with the eggs. • 6. Combine the cheese mixture with the cooled spinach mixture. Season lightly with salt and pepper. • 7. Place 1 sheet of dough on a dry clean surface and brush with melted butter lightly. Place another sheet on top and apply butter. Add one more sheet on top and repeat with butter. Do not soak the dough however. • 8. Cut the dough into four long strips vertically. • 9. Place a small amount of mixture at the bottom of each strip and begin folding into triangle form. Please see video for this! • 10. On a lined baking sheet arrange the triangles evenly spaced apart. Brush with additional butter and bake at 350 degrees for 25 minutes. • 11. Allow the triangles to cool at least 10 minutes before serving. • If making the traditional pie add 1 extra egg to the recipe. Bake the mixture in a pie crust for the same amount of time. It is fine to use a frozen pie crust if desired. Below I will provide a recipe for fresh pie dough. • Ingredients: Pie crust • • 1 1/3 Cup All purpose flour • 5 Tbsp. Chilled water • 4 Oz. Cubed chilled unsalted butter • Pinch of salt and sugar • Procedure: • 1. In a large bowl, add all ingredients minus the water. • 2. With a fork, incorporate the butter into the flour by pressing the butter into the flour. Do this until the mixture becomes crumbly. It takes some elbow grease so be patient • 3.Add the water and mix till the dough is formed. • 4. With the palm of your hand knead the dough briefly. Not too much though! • 5. Wrap the dough with cellophane and chill for at least 20 minutes. • 6. Flour a dry clean surface. Flour a rolling pin. • 7. Starting from the center, roll the dough out until it is about 1 inch larger than your pie dish.
