Let it then rest for another 30 minutes under the kitchen towel. After this resting time, I tightened the dough further by shaping it a bit more. Then, let it rest for another 15 minutes. During this time, preheat the oven to 230 degrees Celsius and place a baking tray on the bottom of the oven. Cut the bread crosswise with a sharp knife or razor blade, remove the top hot baking tray briefly from the oven, place the bread on top, and put it in the oven. Pour a cup of water on the lower tray in the oven and close the oven immediately. Bake for 15 minutes at 230 degrees, then open the oven briefly to let the remaining steam escape and continue baking for about 15 minutes at 230 degrees.
